Roasted Shrimp Salad



Roasted Shrimp Salad


Ingredients:

8 oz Shrimp, raw- shell on (16/20 count)

2 oz Extra Virgin Olive Oil

1/2 tsp Garlic Powder

1/4 tsp Red Pepper Flakes

to taste Salt and Pepper

6-8 oz Mixed Greens

3 oz Cherry Tomatoes, Halved

to taste Garlic Ranch (recipe below)


1. Preheat oven to 375 degrees and line a sheet pan with parchment paper.

2. Place the shrimp in a mixing bowl and add the EVOO, garlic, red pepper, S & P and toss to evenly coat the shrimp.

3. Place the shrimp in a single layer on the sheet pan and roast for 10-12 minutes. Allow to cool before peeling.

4. Place the greens and tomatoes on the plate, top with the shrimp and drizzle with dressing.


Garlic Ranch Dressing

Ingredients

1 cup sour cream

1 cup mayonnaise

2 tsp lemon Juice, freshly squeezed

2 tbsp dried dill weed

2 tbsp chopped fresh parsley

2 tbsp chopped fresh chives

2 tbsp finely minced garlic

To taste Salt and pepper

3/4 cup buttermilk


1. Combine all ingredients until smooth.
