Dinner Party: Girls Night In!




Reconnecting with girlfriends is an essential part of maintaining my balanced lifestyle. Good food, great conversation, and laughter are always on the menu and it feels good to take the time to plan and create an experience for loved ones! Dinner is at 7 pm so prep begins at 2 pm.


Plan of attack:

1) Set the table. 9) Blanch Green beans

2) Make the cake. 10) Roast Brussel Sprouts

3) Roast Potatoes. 11) Make Cheese board

4) Prep brussel sprouts. 12) Light candles

5) Clean and trim green beans. 13) Get party ready

6) Prep the hens and place in oven. 14) Combine potato/butter mixture

7) Glaze the cake. 15) Saute green beans

8) Wrap and bake brie (20-25 minutes). 16) Plate and serve!

Course One

Cheese Board

(Garlic Herb Boursin Cheese, Baked Brie with Red Pepper Honey, Smoked Gouda, Parmigiano-Reggiano, Black Pepper Salami, Marcona Almonds, Kalamata Olives, Caper Berries, Blood Orange, Blueberries, Sundried Tomatoes, Red Grapes, Sourdough Bread, Water Crackers, and Rosemary-Olive Oil Breadsticks)


Course two

Whipped Brown Butter Sage and Ginger Sweet Potatoes

Balsamic Roasted Brussel Sprouts

Lemon Parmesan Green Beans

Million Dollar Cornish Game Hens


Course Three

Lemon Lavender Bundt Cake


Strawberry Sparkling Wine

1 oz Strawberry Syrup, (Monin)

4 oz Sparkling Wine (Martini & Rossi Asti)


Add syrup to glass and top with sparkling wine.




Whipped Brown Butter Sage and Ginger Sweet Potatoes

1.5# Sweet Potatoes

4 oz Butter, browned

3-4 each Sage leaves

1 tsp Ginger, minced

4 oz Heavy Cream

1.5 tsp Sugar

TT Salt and Pepper


1) Roast potatoes whole at 375 degrees until cooked through and soft, about 40 minutes.

2) Combine sage and ginger with warm browned butter (cook butter on medium heat until browned) to infuse the flavors together.

3) Peel the skin off the roasted potatoes, add to a bowl and mash until smooth. Add the strained butter-cream mixture, sugar and salt and pepper. Taste and adjust seasonings as necessary.


Balsamic Roasted Brussels Sprouts

1.5# Brussels Sprouts, trimmed and halved

1/2 tsp Salt

1/4 tsp Black Pepper

1/2 tsp Garlic Powder

1/2 tsp Red Pepper Flakes

2.5 Tbsp Balsamic Vinegar

2 Tbsp Extra Virgin Olive Oil


1) Preheat oven to 375 degrees.

2) Combine all ingredients in a bowl. Toss together and let sit at room temperature for 20-30 minutes.

3) Place Brussels sprouts on a sheet pan in a single layer and roast for 30 minutes until tender.


Lemon Parmesan Green Beans

1.5# Green Beans, Trimmed

2 Tbsp Butter

1.5 tsp Lemon Zest

2 tsp Parmesan, grated

TT Salt and Pepper


1) Bring a pot of water to a boil. Add salt. In 2-3 batches, add the green beans to the boiling water cooking until bright green and still crisp (about 1 minute). Then immediately placed cooked green beans to an ice bath.

2) Add butter to a saute pan and melt. The add the green beans to pan and toss in butter to heat through and coat in the butter. Add the lemon zest, Parmesan, salt and pepper, and taste for seasoning.

Lavender Lemon Bundt Cake

2 1/4 cups All-Purpose Flour

2 1/4 tsp Baking Powder

1/2 tsp Salt

4 each Eggs

2 cups Sugar

1.5 tsp Vanilla

2 Tbsp Lemon Zest

3 Tbsp Lemon Juice

1 Tbsp Lavender flowers

1 1/4 cup Milk, warmed

6 oz Butter, melted


Glaze

3 oz Lavender Simple Syrup*

4 oz Lemon Juice


1) Preheat oven to 350 degrees. Grease bundt pan.

2) Combine flour, baking powder, salt in a bowl and set aside. Beat eggs in a stand mixer (paddle) until thickened and pale yellow. Then slowly stream in sugar, mixture should become light and fluffy. Add vanilla, lemon zest and juice, lavender flowers. Alternate additions of the flour mixture and the milk and butter to the egg mixture.

3) Pour the batter to the bundt pan and bake for 30-35 minutes. Bake until golden brown and set.


Glaze

1) *combine equal part sugar and water in a sauce pan and cook until dissolved. Add the lavender flowers to the sauce pan and steep for 5 minutes.

2) combine Lavender Simple Syrup and lemon juice together and pour over the cooled cake.
