Chewy Oatmeal Cookies



When it's cold outside all we want are those comforts that feel like a warm blanket and crackling fire. These cookies give you warmth from the cinnamon and nutmeg, comfort in the oats, and relaxation in the crisp exterior and super soft and chewy interior. A glass of milk or, if your like me, dunked into your morning cup of coffee. It's oatmeal, right?! The perfect pick me up!


Chewy Oatmeal Cookies

Makes 18-20


INGREDIENTS:

3/4 cup (1 1/2 sticks) unsalted butter, softened

1/4 cup vegetable oil 1 cup granulated sugar 1/2 cup packed brown sugar 1 large egg 2 teaspoons vanilla extract 1 2/3 cups all-purpose flour 1 teaspoon ground cinnamon 3/4 teaspoon baking soda 1/4 teaspoon salt 1/8 teaspoon baking powder 1/8 teaspoon ground nutmeg 1 1/2 cups quick cooking oats


1. Preheat oven to 350 degrees and line your sheet pan with parchment or a baking mat.

2. In a bowl combine the butter and oil until smooth. The incorporate the sugars until light and fluffy.

3. Add the egg and vanilla extract to the butter mixture, and thoroughly combine.

4. In a separate bowl, combine the remaining dry ingredients.

5. Next combine the dry ingredients with the butter mixture and stir until you no longer see dry spots.

6. Using a portion scoop or spoons, scoop the mixture into even mounds leaving 1/2 inch between each cookie. Bake for 12-15 minutes until set and light brown. Enjoy!
